Creamy Garlicky Butternut Squash Noodles


  • 1 box of Veggie Noodle Co Butternut Spirals 
  • 1 riped avocado
  • 1/2 cup of chopped tomatoes
  • 1/4 cup of diced purple onions
  • 1/4 cup of avocado oil
  • 1/4 cup minced garlic 
  • 1/4 lime juice
  • 1/2 cup of salad greens
  • Salt and pepper to taste 


  1. In a medium size pot, mash the avocado with a fork. Stir in onions, tomatoes, avocado oil, garlic and lime juice. 
  2. Continue mashing and mixing the ingredients well, till it comes a creamy texture.
  3. Add noodles and greens into the bowl and toss all the ingredients well. Salt and pepper to taste.
  4. Serve cold or warm the noodles over medium heat for about 5 minutes, tossing the noodles frequently to prevent it from burning.
