Creamy Garlicky Butternut Squash Noodles
- 1 box of Veggie Noodle Co Butternut Spirals
- 1 riped avocado
- 1/2 cup of chopped tomatoes
- 1/4 cup of diced purple onions
- 1/4 cup of avocado oil
- 1/4 cup minced garlic
- 1/4 lime juice
- 1/2 cup of salad greens
- Salt and pepper to taste
- In a medium size pot, mash the avocado with a fork. Stir in onions, tomatoes, avocado oil, garlic and lime juice.
- Continue mashing and mixing the ingredients well, till it comes a creamy texture.
- Add noodles and greens into the bowl and toss all the ingredients well. Salt and pepper to taste.
- Serve cold or warm the noodles over medium heat for about 5 minutes, tossing the noodles frequently to prevent it from burning.
