Creamy Vanilla Almond Oats


  • 1 cup of rolled oats
  • 1 cup of almond milk
  • 3/4 cup coconut milk
  • 1 tsp vanilla extract 
  • 1/2 tbsp of coconut flakes
  • 1 tbsp of coconut sugar
  • 1/2 cup of sliced oranges
  • 1/4 cup of blueberries
  • 1/4 cup freeze-dried strawberries 
  • 2 tbsp of pumpkin seeds


  1. Combined rolled oats, coconut milk, almond milk, vanilla extract and coconut sugar in a bowl. Mix ingredients well.
  2. Cover the bowl and let it chill over night in the fridge. 
  3. In the morning, use a medium saucepan, cook oats mixture over low medium heat for about 5 minutes.
  4. Pour oats mixture in two bowls. Topped with sliced oranges, blueberries, strawberries, pumpkin seeds and coconut flakes. 
  5.  Serve hot and enjoy!
